Pumpkin Whoopie Pies a Day Late


I was supposed to post this yesterday, but I have sooo much going on right now. So, I apologize for being a day late.  Pumpkin Whoopie Pies!  Here's what you'll need:

 
1 Betty Crocker SuperMoist Spice cake mix
1/3 cup butter, softened
1 (15 ounce) can pumpkin
2 teaspoons pumpkin pie spice
2 whole eggs (I used small eggs and they came out really moist)
1/2 cup milk
1 (16 ounce) container Betty Crocker cream cheese frosting




Preheat your oven to 350 degrees and line your cookie sheet with parchment paper or cooking spray. I used Baking Joy cooking spray with flour.



 Throw it all in a bowl and mix slowly for 30 seconds or until combined, then beat for 1-2 minutes. The batter will be on the wet side.
 Drop tablespoon-sized dollops onto the cookie sheet and try to make sure they are all the same size.

Mine were pretty big and I only ended up with ten when they were all put together, but you can make them any size you want. They need to match up when you put them together though.
 Bake for 10-11 minutes.

I had three trays so it took me a little longer. I think I baked for about 20 minutes.











Let them cool completely.



Frost a cookie with a dollop of cream cheese frosting and top with another cookie. They really aren't cookie texture, but they are about the size of one.

I used a little powdered sugar to decorate them.

Store in an airtight container and refrigerate until ready to eat.

I'm not usually a fan of pumpkin, but these were really good and they didn't last. They were gone in less than about a week If you like pumpkin desserts then you'll love these so go give them a try.

Bake-A-Palooza!!!

Making Some Changes Around Here

Crazy news! I quit my job! I'm not going to talk about it much, but it was time for a change.

It's time for a change here too. Over the next few months I'm going to start using my cake blig again. I know I've said it before, but I'm serious this time. I'll have more time to blig and more time to back and learn new things. So, stay tuned! All three of you. Lol. And invite your friends.

I'm Gonna Kill You!!

A man came through my department the other day. As he bypassed the deli and strolled past me he asked me to slice some meat for him. Being the CAKE DECORATOR, I thought he was joking and it didnt help that he and his buddy were laughing THE WHOLE TIME! I even asked if he was serious! So, I went about ny cake business. He came back around ten-ish minutes later wanting to know where his meat was. Well...I didnt cut it! His reply? "I'm gonna kill you!" We still aren't sure if he was joking... But he got his meat cut.

I came in to that bag of icing today. My reaction? "I'm gonna kill her!". Lol

Death By Cocolate

These are some Death By Chocolate (also known as Chocolate Overload) cakes that i made before I went to Washington so they wouldn't run out while I was gone.
LOL  So, I made all of these at one time.  Nine Chocolate Overload bar cakes and a Death By Chocolate 8" round.

So, I'd say it's a chocolate cake win.  lol

Not Enough Time - Cake Woe

Today was rough.  I went in to work at nine to find that I had 7 (seven) cake orders due at ten.  I guess you I don't need to tell you that I didn't make it.  We had to call some customers and see if it was okay for them to pick their orders up a little later.  Fortunately, they were alright with that.  Of course, when I originally took the order three days ago (it was for the rec center), they had only ordered four 1/4 sheets and wanted to pic them up at twelve.  When I got to work today, they'd ordered two more and changed the pic up from 12 to 10.  And I had another, separate, order for ten.

Tomorrow probably won't be any better.  I clock in at ten and have four or five orders for twelve.  I'm counting on being super rushed tomorrow too.  *sigh*

Well, no cake blog is complete without a picture of cake, so...here ya go.
It's not all the impressive...Pink, green, and purple.  And there's a smear across my cam lens that has since been cleaned.  lol

So, to recap, today was a definite Cake Woe...
